How to make mango pancakes!
What you will need… (Ingredients)
Pancake
¾ cup of plain flour
¾ cup of powdered sugar
4 tablespoons of shredded fresh
coconut
2 mangoes, pureed
½ cup of coconut milk
1-2 tablespoons of oil
Filling
1 mango, chopped neatly
½ cup of fresh cream
2 tablespoons of powdered
sugar
Garnish
1 tablespoons caster sugar
Method
1. Pancakes- In a bowl, mix all the ingredients except the oil and make a smooth
batter.
2. Heat a little oil in a non-stick pan and pour in 1 tablespoon of the batter and
spread evenly to make a circle.
3. Cook the batter circle evenly on both sides until each side is golden
brown.
4. Repeat this process for the rest of the batter.
5. Filling- Peel and chop the mango into small pieces.
6. Whip the cream with the powdered sugar until peaks form. Combine with the mango.
7. Spoon a little filling on each of the pancakes and then fold neatly to a semi-circle.
8. Repeat this step with all the pancakes.
9. Arrange the mango pancakes on to a serving plate and sprinkle a touch of caster sugar on
them.
10. Your mango pancakes are now complete.
